The first time I tried making Green Papaya Soup, I accidentally bought a yellow papaya so I had to make fruit salad instead. Make sure your papaya is an actual green papaya. If there is any yellow, then it is already starting to ripen. Aside from that, this soup is very easy to make. It only has three ingredients: pork ribs, green papaya, and salt.
Blanch pork ribs in a large soup pot of boiling water to remove scum. Drain the water.
Refill the soup pot with 10 cups of water, add green papaya and salt, and bring to a boil. Reduce the heat, partially cover with a lid, and simmer for about 2 hours.
Taste and season with extra salt if needed. Serve hot.

Green papaya: Look for ones with entirely green skin. If you notice any hints of yellow, it means the papaya is beginning to ripen.Storage: Allow the soup to cool to room temperature before storing it. You can submerge it in a sink of cold water to speed up the process. Then, store it in an air-tight container in the refrigerator for up to 5 days.
