Banana Muffins

These Banana Muffins are soft, moist, fluffy, and easy to make in under 30 minutes. They taste like banana bread but in muffin form.

  • Preheat your oven to 425F. Line a 12-cup muffin tray with liners.
  • In a medium bowl, mix together the flour, baking powder, baking soda, salt, and cinnamon.
  • In a large bowl, mash the bananas. Whisk in the brown sugar, oil, egg, milk, and vanilla extract until smooth.
  • Add the dry ingredients to wet mix, and mix until JUST combined.
  • Divide the batter into muffin liners.
  • Bake at 425°F for 5 minutes, then lower the oven to 350°F and bake another 16–18 minutes, until a toothpick comes out clean.
  • Cool in the pan for 5 minutes, then move muffins to a rack to cool fully.
