Banana Muffins

Preheat your oven to 425F. Line a 12-cup muffin tray with liners.
In a medium bowl, mix together the flour, baking powder, baking soda, salt, and cinnamon.
In a large bowl, mash the bananas. Whisk in the brown sugar, oil, egg, milk, and vanilla extract until smooth.
Add the dry ingredients to wet mix, and mix until JUST combined.
Divide the batter into muffin liners.
Bake at 425°F for 5 minutes, then lower the oven to 350°F and bake another 16–18 minutes, until a toothpick comes out clean.
Cool in the pan for 5 minutes, then move muffins to a rack to cool fully.
