    Banana Muffins

    These Banana Muffins are soft, fluffy, moist, and ridiculously easy to make. All you do is combine the dry and wet ingredients separately, then combine them together, and bake. Ready in under 30 minutes! We love serving these warm with a pat of butter.

    About This Recipe

    One of the most popular recipes on my blog is actually my banana bread. It's super moist and easy to make. I think that's why it's people love it.

    The only problem with my banana bread is that it takes a long time to bake. My recipe requires about one hour. Sometimes, I do not want to wait that long, so in those times, I make these banana muffins instead! They're just as tasty, but they bake up in only about 20 minutes.

    10 minutes to prep the ingredients and another 20 minutes for baking. You also need to let them rest for a few minutes so that their crumb can set. But if you're a lover of fresh, warm muffins, you can eat them right away, no one will know ๐Ÿ™‚

    I love serving them as a light dessert after dinner, or as a sweet breakfast with a pat of butter. They freeze well and are also great for sharing. Make them for your next gathering, party, or to take to the office!

    Key Ingredients

    Flour: I always use all-purpose flour, spooned and levelled into the measuring cup.

    Baking powder + soda: For giving the muffins their rise.

    Salt: Enhances the flavor of these muffins.

    Mashed bananas: Make sure your bananas are very ripe. The more bruises, the better!

    Brown sugar: I love the flavor of brown sugar in these muffins. Light or dark brown sugar is good for this recipe.

    Vegetable oil: Keeps the muffins moist and tender.

    Milk: A little bit of moisture helps the muffins have a taller rise.

    Egg: The main ingredient to bind everything together.

    Vanilla extract + cinnamon: Adds warm, cozy flavor!

    STEP 1: In a medium bowl, mix together the flour, baking powder, baking soda, salt, and cinnamon.

    STEP 2: In a large bowl, mash the bananas. Whisk in the brown sugar, oil, egg, milk, and vanilla extract until smooth.

    STEP 3: Add the dry ingredients to the wet mix, and mix until JUST combined.

    STEP 4: Divide the batter into muffin cups, making sure to fill to the top of the liners.

    STEP 5: Bake at 425ยฐF for 5 minutes, then lower the oven to 350ยฐF and bake another 16โ€“18 minutes, until a toothpick comes out clean.

    Ingredients
      

    • 1 ยฝ cups all-purpose flour
    • 1 teaspoon cinnamon
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • ยฝ teaspoon salt
    • 1 ยฝ cups mashed ripe bananas (about 3โ€“4 bananas)
    • โ…” cup packed brown sugar
    • 6 tablespoons vegetable oil
    • 2 tablespoons milk
    • 1 large egg
    • 1 teaspoon vanilla extract

    Instructions
     

    • Preheat your oven to 425F. Line a 12-cup muffin tray with liners.
    • In a medium bowl, mix together the flour, baking powder, baking soda, salt, and cinnamon.
    • In a large bowl, mash the bananas. Whisk in the brown sugar, oil, egg, milk, and vanilla extract until smooth.
    • Add the dry ingredients to wet mix, and mix until JUST combined.
    • Divide the batter into muffin liners.
    • Bake at 425ยฐF for 5 minutes, then lower the oven to 350ยฐF and bake another 16โ€“18 minutes, until a toothpick comes out clean.
    • Cool in the pan for 5 minutes, then move muffins to a rack to cool fully.
