    About This Recipe

    Whenever I need to cook breakfast/brunch for a crowd, I turn to this super-easy tater tot sausage breakfast casserole recipe. It's savory, hearty, satisfying, and most importantly, delicious. The crispy tater tots on top take it to the next level, and everyone will go crazy over how delicious. Think of this recipe like a medley of all your favorite breakfast dishes combined into one.

    You can save time in the morning by assembling the casserole the night before. Once you've poured everything into the casserole dish, simply cover it with foil and chill it in the fridge until you're ready to bake. In the morning, no need to bring the casserole to room temperature; you can bake it straight from the fridge.

    I made this for brunch last weekend, and to quote my wife: "You should make this every weekend."

    Breakfast sausage: Breakfast sausage brings that classic breakfast flavor to the casserole. You can use any style of breakfast sausage you want, or even Italian sausages.

    Frozen tater tots: No need to thaw these before using. The tater tots go straight from the bag into the casserole, and they will crisp up as the casserole bakes.

    Cheddar cheese: I recommend a sharp cheddar cheese to bring a bit of tanginess to the casserole. You can also use pepper jack for a spicier flavor or white cheddar for a milder taste.

    Mozzarella cheese: Gives the filling that gooey, cheese-pull texture. Try to shred your own cheese if you can, since preshredded cheese has anti-clumping agents that don't let it melt as easily.

    Eggs: Eggs are what set the casserole and hold everything together as it bakes.

    Milk: I use whole milk because it has a nice, rich flavor, but you can use lower-fat milk if that's all you have. Half and half would also work well, but it will be very rich.

    Spices: All you need is salt, pepper, garlic powder, and onion powder. If you want even more flavor, you can try adding spices that are normally found in breakfast sausages, like sage, paprika, or fennel seeds.

    STEP 1: In a large skillet over medium-high heat, cook and crumble the sausage until no longer pink. Drain the excess fat.

    Ingredients
      

    • 1 ยฝ pounds breakfast sausage
    • 24-32 ounces frozen tater tots (1 bag)
    • 1 ยฝ cups shredded cheddar cheese
    • 1 cup shredded mozzarella cheese
    • 8 large eggs
    • 2 cups milk
    • ยฝ teaspoon salt
    • ยฝ teaspoon black pepper
    • ยฝ teaspoon garlic powder
    • ยผ teaspoon onion powder

    Instructions
     

    • Preheat oven to 350ยบF. Lightly grease a 9ร—13-inch baking dish with cooking spray and set aside.
    • In a large skillet over medium-high heat, cook and crumble the sausage until no longer pink. Drain excess fat.
    • In a large bowl, toss together the tater tots, cooked sausage and cheeses. Pour into the baking dish and spread into an even layer.
    • In a medium bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder. Pour evenly over the tater tot mixture.
    • Bake uncovered for 60-70 minutes until the eggs are set and no longer jiggly.

    Notes

    To make ahead: After pouring the egg mixture into the baking dish, cover with foil and refrigerate for up to 1 day. Bake straight from the fridge.
