    Shiitake Mushroom Stir-fry

    The Shiitake Mushroom Stir-fry puts shiitake mushrooms at center stage! It is quick, tasty, and only requires a few Chinese seasonings.

    My parents recently started growing their own shiitake mushrooms at home, and they have been giving me boxes of them every time they visit. One of my favorite ways to prepare them is in a stir-fry.

    Not only do they taste delicious, but they take on a tender and almost meaty texture. For the sauce, I like to keep the seasonings very simple. A little bit of garlic, soy sauce, and oyster sauce. You really don't need more than that.

    Fresh shiitake mushrooms only require a few minutes to cook through. Keeping the heat high is key. This allows steam to escape and ensures water does not build up in the pan. There is nothing worse than wet and soggy mushrooms.

    This recipe uses oyster sauce, but you can make it vegan by using vegan-flavored oyster sauce or just soy sauce. LKK has a brand of vegan oyster sauce that I love. Funnily enough, it is made with shiitake mushrooms.

    • Fresh Shiitake Mushrooms: The stems of shiitake mushrooms become tough and woody after cooking, so we will need to remove and discard them. You can also save them for making vegetable stock for other recipes.
    • Garlic: I really recommend you to mince these for the most flavor.
    • Soy Sauce: I am using low-sodium soy sauce today.
    • Oyster Sauce: If you do not have oyster sauce, you can just substitute it with soy sauce (Use 1 teaspoon of soy sauce for every 1 tablespoon of oyster sauce).
    • Oil: Any neutral-flavored oil with a high smoke point, like canola or vegetable.

    STEP 1: Remove the stems from the shiitake mushrooms and slice the caps in half. If the mushrooms are very big, slice them in quarters.

    STEP 2: Heat one tablespoon of oil in a wok over high heat. Once it is lightly smoking, add the shiitake mushrooms. Cook for about 3 minutes until they turn golden and shrink by about 20% in size. Make sure you are constantly stirring to allow steam to escape.

    STEP 3: Reduce the heat to medium and push the mushrooms to one side of the wok. Add one tablespoon of oil into the empty space. Add the minced garlic and cook it in the oil for 30 seconds. Then, mix the garlic and mushrooms together.

    STEP 4: Add the soy sauce, oyster sauce, and a teaspoon of water and continue cooking for 1-2 minutes. Serve immediately over rice.

    • 3 cloves garlic (minced)
    • 1 tablespoon oyster sauce
    • 1 teaspoon soy sauce
