I love making this shaved Brussels sprout salad whenever I'm looking for a unique salad to put on the table. A lot of people I make it for have never tried a Brussels sprouts salad before! Thinly shaved Brussels sprouts tossed with sliced almonds, cranberries, bacon, and a sweet-tangy dressing- it's the perfect side dish for lunch or dinner.
Even better, this salad is super easy to throw together using basic ingredients. Almost all the work is simply washing and shaving the Brussels sprouts. It can take a bit of time, but I promise it's worth it. The sweet and tangy dressing combined with the crisp texture of the Brussels sprouts is unbeatable.
For shaving the Brussels sprouts, I used a sharp knife to cut them as thin as possible. If you have an automatic shredder or mandolin, it'll make the job even easier and faster.
Key Ingredients

Brussels sprouts: You'll need about two dozen Brussels sprouts or around 2 pounds.
Nuts: I love sliced almonds in this salad, but feel free to use whatever your favorite nut is.
Parmesan: I like adding Parmesan because it adds a bit of saltiness to the salad without just adding plain salt!
Dried cranberries: These add pops of brightness throughout.
Cooked bacon: For an extra crunchy texture, I like to throw in a handful of crunchy bacon. To crisp up the bacon, I cooked it in a nonstick pan over medium heat for about 10 minutes. The key is to cook it low and slow, so the fat slowly renders out.
Red onion: Adds a bit of spiciness and savory depth. Try to chop the onions as finely as possible so you don't end up with large pieces of onion in every bite. And if you're not a fan of red onions, feel free to leave them out!
For the salad dressing: You'll need olive oil, apple cider vinegar, honey, dijon mustard, salt, and pepper. The apple cider vinegar can be substituted with lemon juice in a pinch. The dijon mustard acts as an emulsifier, meaning it binds the oil and liquid in the dressing.
Instructions

STEP 1: Trim the Brussels sprouts stem, cut in half, and then thinly slice both halves.

STEP 2: Transfer to a large bowl, along with the almonds, parmesan, cranberries, bacon, and onion.

STEP 3: In a small bowl, whisk together all the dressing ingredients.

STEP 4: Drizzle the dressing over the salad and toss together. Serve immediately or chill for a few hours. Enjoy!
