I eat these oatmeal applesauce muffins year-round! They're so easy to make, and my wife always requests them because they're healthy and delicious. Oats are packed with fiber and are one of the few foods shown to help lower bad cholesterol- so eating a muffin for breakfast doesn't sound too bad after all!
I love how moist and tender these muffins are- the applesauce keeps them incredibly soft in every bite. I developed this recipe to be extremely easy. No fancy equipment needed. Just two bowls and a whisk. Just mix together the dry ingredients and wet ingredients separately, then stir them together until just combined. Then, all you do is pour them into muffin cups and bake.
Key Ingredients

All-purpose flour: Make sure to spoon the flour into your measuring cup and level it off with a knife rather than scooping directly from the bag, which can pack in too much flour.
Quick oats: Quick oats (or instant oats) blend into the batter more evenly and give the muffins a more tender texture.
Brown sugar: Brown sugar pairs wonderfully with cinnamon and apple. You can also use granulated sugar, but I love the extra flavor that brown sugar adds.
Ground cinnamon: For warm, cozy flavor! Make sure your cinnamon is less than one year old for the most potent flavor.
Baking powder and baking soda: I use both baking powder AND baking soda to help the muffins rise and keep the crumb light and fluffy.
Salt: To enhance all the flavors.
Applesauce: Use unsweetened applesauce so we can control the sugar levels.
Milk: Whole milk is my preference for this recipe, but any milk or nondairy milk will work.
Vegetable oil: Keeps the muffins soft and moist even after they've cooled.
Egg: Helps bind everything together and gives the muffins structure.
Vanilla extract: Adds warmth to the apple flavor!
Instructions

STEP 1: In a large mixing bowl, combine the flour, oats, brown sugar, cinnamon, baking powder, baking soda, and salt. Mixing the dry ingredients first means the leaveners and spices are evenly distributed throughout before the wet ingredients get mixed in.

STEP 2: In another bowl, combine the applesauce, milk, vegetable oil, egg, and vanilla extract.

STEP 3: Pour the wet ingredients into the dry ingredients and mix until JUST combined. A few small streaks of flour are OK. Avoid overmixing as it develops the gluten in the flour and will leave you with dense muffins. Divide the batter evenly between the muffin cups, filling each one about ยพ to the top. This gives the muffins room to rise and dome without spilling over.

STEP 4: Bake for 15 to 18 minutes, until a toothpick inserted in the center of a muffin comes out clean. Let them cool in the pan for 5 minutes before transferring to a wire rack.

Ingredients
- 1 ยพ cups all-purpose flour (spooned and levelled)
- 1 cup quick oats
- ยฝ cup packed brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- ยพ teaspoon baking soda
- ยฝ teaspoon salt
- 1 cup applesauce
- ยฝ cup milk
- ยผ cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 400ยฐF. Line a 12-cup muffin tray with muffin liners and spray with non-stick cooking spray.
- In a large mixing bowl, combine the flour, oats, brown sugar, cinnamon, baking powder, baking soda, and salt.
- In another bowl, combine the applesauce, milk, vegetable oil, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until JUST combined. A few streaks of flour are OK- avoid overmixing.
- Scoop the batter into the liners about ยพ way to the top.
- Bake for 15-18 minutes or until a toothpick inserted in the center comes out clean.
