    Korean Cheese Ramen

    This Korean Cheese Ramen has been trending on social media lately and it is very easy to make. It is made with Buldak ramen, which is a Korean brand of spicy instant noodles. You will also need milk and cheese. The milk and cheese help tone down the spiciness and make it 10x creamier and more delicious.

    Pair this with my Gochujang Enoki Mushrooms for a fun meal!

    Korean Cheese Ramen is becoming one of my go-to meals when I'm running low on groceries. I always have a box of Buldak ramen in my pantry. If you're not familiar with it, it's a brand of spicy instant noodles from Korea. It was actually ranked as one of the most spicy instant ramen in the world.

    This recipe only takes 10 minutes to make, but it's one of my favorites. I've never cared much for instant noodles (as it reminds me of my sad college days), but I absolutely love this recipe. It's spicy, creamy, and so addictive!

    There are a few flavors of Buldak you can use- spicy is the most popular, but the creamy carbonara and curry flavors are amazing too. Some people use the Ottogi brand as well. Here are my favorite ones:

    4 varieties of Samyang ramen

    This is definitely a dish that I probably make a bit too much of. It was a weekly occurrence at one point but that's because it's so easy to whip up.

    My favorite add-in is processed cheese (or American cheese, as Americans call it). My wife prefers mozzarella cheese, but I think it doesn't have the same level of creaminess. If this is your first time, I highly recommend going with processed cheese.

    Super simple recipe- you only need three ingredients aside from water.

    • Samyang ramen: My favorite flavors for this are the regular Buldak and creamy carbonara. The carbonara noodles are curvier and sightlier chewier. I've tried the 2x spicy, and it's a bit too spicy for my taste, but if that's your thing, go for it.
    • Milk: Milk helps mellow out the spiciness. Like actually. There is a protein in milk called casein which helps break the bonds between the capsaicin and the nerve receptors on your tongue.
    • Processed cheese (American cheese): Some sort of cheese is required, but it doesn't have to be processed. I think processed gives the creamiest texture, but you can use real cheese if you prefer. If so, mozzarella would be the way to go.

    STEP 1: Boil 2 cups of water in a small pot over medium-high heat. Add the instant ramen and cook for 90 seconds until the noodles are loosened but still semi-firm. Strain most of the liquid into the sink, but leave about two tablespoons in the pot.

    STEP 2: Add the milk and seasoning packets to the pot. Mix well and bring the mixture back to a simmer.

    STEP 3: When the ramen begins to simmer, reduce the heat to low and add one slice of processed mozzarella cheese. Mix well.

    STEP 4: Cook for 30 seconds or until the cheese melts and the sauce thickens slightly. Transfer to a serving bowl and serve immediately.

    If the noodles are too sticky, you can add extra milk to loosen them up. The sauce tends to get thicker as it cools down. When my wife and I eat it, I usually add some extra milk or water halfway through to make it creamy again.

    My wife and I always add extra toppings to make it more filling. Some of the ones we like are fried egg, frozen corn, sliced green onions, chopped nori (dried seaweed for gimbap and sushi), or chopped kimchi.

    • When the ramen begins to simmer, reduce the heat to low and add one slice of processed mozzarella cheese. Mix well. Continue cooking for 30 seconds until the sauce thickens and the cheese is melted. Transfer to a serving bowl and serve immediately.
