    Greek Potatoes

    These Greek Potatoes are bright and flavorful, baked in a savory garlic lemon broth that soaks into every bite. It's fast and easy with only 10 minutes of prep!

    About This Recipe

    I seem to always have a big bag of potatoes sitting at the bottom of my pantry. I slowly work my way through them, but then, as soon as one bag is gone, another one takes its place. I like keeping potatoes on hand because they're perfect for easy side dishes, like mashed potatoes, potato wedges, and hasselback potatoes.

    Recently, my wife and I went to a Greek restaurant, and I fell in love with their Greek potatoes. They were bright and savory, generously seasoned with lemon juice and dry herbs. I'd never had potatoes like that before, but now I want to eat them that way all the time.

    After doing some research online, I found that they're super simple to make! All you do is bake the potatoes in a delicious concoction of chicken stock, lemon juice, olive oil, and oregano. While the recipe does take a bit of time - about one hour - it allows the potatoes to soak up all that delicious broth. But now you have plenty of time to work on your main course! (Or just eat potatoes. I won't judge.)

    Key Ingredients

    Potatoes: You'll want to use a baking variety of potatoes, like Russet or Yukon Gold, or any white/yellow potato.

    Garlic: For savory depth. If you're lazy, you can also use 1 teaspoon of garlic powder, but fresh garlic does taste way better.

    Chicken broth: I use a flavorful broth like Better Than Bouillon roasted chicken base.

    Lemon juice: This is what Greek potatoes are known for, their bright and acidic flavor.

    Olive oil: Helps the seasonings adhere to the potatoes and helps the potatoes crisp up in the oven.

    Dried oregano. You can also use 2-3 tablespoons of fresh oregano. Or replace the dried oregano with Italian seasoning.

    Salt and black pepper: Add to your own taste.

    STEP 1: In a 9x13 baking dish, combine the chicken broth, lemon juice, oil, garlic, oregano, salt, and black pepper. Add the potatoes and stir to coat.

    STEP 2: Bake for 80-90 minutes until the potatoes are fork-tender on the inside and crispy on the outside.

    Ingredients
      

    • 2 ยฝ pounds potatoes
    • 1 ยฝ cups chicken broth
    • โ…“ cup fresh lemon juice
    • ยผ cup olive oil
    • 4 cloves garlic (minced)
    • 1 tablespoom dried oregano
    • 1 teaspoon salt
    • ยฝ teaspoon black pepper

    Instructions
     

    • Preheat your oven to 350ยฐF and set the rack in the middle position.
    • Peel and cut the potatoes into wedges.
    • In a 9x13 baking dish, combine the chicken broth, lemon juice, oil, garlic, oregano, salt, and black pepper.
    • Add the potatoes and stir to coat. Arrange the potatoes in a single layer.
    • Bake for 80-90 minutes until the potatoes are fork-tender on the inside and crispy on the outside.
