Preheat your oven to 350°F and set the rack in the middle position.
Peel and cut the potatoes into wedges.
In a 9x13 baking dish, combine the chicken broth, lemon juice, oil, garlic, oregano, salt, and black pepper.
Add the potatoes and stir to coat. Arrange the potatoes in a single layer.
Bake for 80-90 minutes until the potatoes are fork-tender on the inside and crispy on the outside.
