    Easy Pecan Pie

    This easy Pecan Pie recipe requires only 10 minutes of prep! Made with pecans, corn syrup, eggs, sugar, and frozen pie crust, it's sweet, gooey, and beautifully crunchy. Perfect for a holiday dessert for Christmas or Thanksgiving.

    About This Recipe

    When I was growing up, my mom didn't bake very often because she didn't want our family eating too much sugar. However, when she did bake, she always made this pecan pie (our family loves pecans!). She learned this recipe from one of our family friends who owned a bakery, and now I'm sharing it with everyone here!

    The pecan pie is incredibly simple to make. It only requires 7 ingredients and one bowl for mixing. I start by defrosting a store-bought pie crust, then layering the bottom with pecans. Then, mix the filling ingredients in a bowl and pour them over the pecans. Then, just bake for about 55-60 minutes.

    I recommend setting your oven rack in the lower middle position. This puts more heat on the bottom of the crust, so you don't end up with raw pastry underneath. Also, if the top crust starts browning too much, you can place a sheet of foil over the top. Once the pie is baked, let it rest for at least 1-2 hours so that the filling can set- it's very gooey, so it needs some time to firm up.

    Pecan pie is a delicious dessert that you can make year-round. My family stores pecans in our freezer so we can make them any time of the year. It's especially delicious during holiday dinners like Thanksgiving or Christmas.

    Key Ingredients

    Frozen pie crust: You'll need one 9-inch, deep-dish frozen pie crust. Please defrost it in the fridge for at least 2 hours or at room temperature for 15 minutes. No need to pre-bake it.

    Light corn syrup: The base of the filling. You can also use golden corn syrup.

    Brown sugar: I love the taste of brown sugar in this pie. White sugar also works.

    Eggs: Eggs are what set the pie filling into the proper texture.

    Melted butter: For rich flavor.

    Vanilla extract: For that warm vanilla flavor.

    Pecans: Halves or chopped are both okay. I've only ever used raw pecans in this recipe. I wonder if roasted would be fine. If you try that out, let me know in the comments!

    STEP 2: In a large bowl, whisk together the corn syrup, brown sugar, eggs, melted butter, and vanilla extract. Pour over top of the pecans.

    • 1 (9-inch) frozen deep-dish pie crust
    • 1 cup light corn syrup
    • ยพ cups brown sugar
    • 3 large eggs
    • 2 tablespoons melted butter
    • 1 teaspoon pure vanilla extract
    • 1 ยฝ cups pecans (halves or chopped)

    Instructions
     

    • Preheat your oven to 350ยฐF and set the rack in the lower-middle position. Defrost the pie crust according to package directions.
    • In a large bowl, whisk together the corn syrup, brown sugar, eggs, melted butter, and vanilla extract.
    • Arrange the pecans in the bottom of the pie crust, then pour the filling over the pecans.
    • Bake for 55-60 minutes. If the crust is getting too brown, cover the top with a sheet of foil. Allow the pie to cool for 1-2 hours at room temperature before slicing.
