Crepes have to be one of the most delicious breakfast items, yet most people will never attempt them at home. There's a common belief that only restaurants can make them properly- but I'm here to show you that's not true!
The truth is, crepes are incredibly easy to make. Sure, your first crepe may not look picture-perfect, but once you make 1 or 2, they'll start looking just like the ones at your favorite breakfast spot.

No fancy equipment is needed either. I make crepes using just a cast-iron pan. Some people use a nonstick pan, but I strongly prefer cast iron because it gives the crepes a beautiful golden color. Every time I use a nonstick pan, my crepes come out very pale-colored, even when the heat is high.
The batter itself is very easy to put together. Just combine 5 simple ingredients in a blender, and blend until smooth. You want to let the batter rest for at least 30 minutes, but ideally overnight. This will improve the texture of the crepes tenfold. Not only that, but it gives time for the bubbles to dissipate from the batter so u have the smoothest-looking crepe.
Key Ingredients

Flour: I used all-purpose flour. To measure the flour correctly, spoon the flour into your measuring cup instead of scooping it directly from the bag. Then, use something flat (like a knife) to level off the top. This helps you get the right amount of flour for the recipe.
Milk: I used whole milk. Non-dairy milk like almond milk or oat milk will work as well.
Eggs: I used 4 large eggs.
Melted butter: You can also use oil.
Sugar: The sugar helps get a brown color on the crepes.
Instructions

STEP 1: Add all the ingredients to a blender and blend on medium-high speed until smooth. Use a spatula to scrape down the sides. Chill the batter for at least 30 minutes and up to 24 hours. I typically prepare the batter the night before and make crepes in the morning.

STEP 2: Heat a cast-iron skillet over medium heat. Pour โ cup of batter into the center and quickly tilt the pan in a circle to cover the bottom of the pan.

STEP 3: Cook the bottom side for 1-2 minutes, then flip and cook for another 30 seconds until golden brown. Transfer to a plate while you make the rest.

Ingredients
- 2 cups all-purpose flour (spooned and levelled)
- 1 ยพ cups milk
- 4 large eggs
- ยผ cup melted butter
- 1 tablespoon sugar
- ยฝ teaspoon salt
Instructions
- To a blender, add flour, milk, eggs, melted butter, sugar, and salt. Blend until the batter is smooth, 20-30 seconds. You can also whisk them together in a bowl. Refrigerate for at least 30 minutes, but ideally overnight (the texture will be better!)
- Heat a cast-iron pan over medium heat. Pour โ cup batter into the center of the pan, then immediately tilt the pan in a circle so that the batter covers the bottom of the pan. Cook for 1-2 minutes, then flip and cook the other side for 30 seconds until golden brown. Transfer to a plate while you cook the rest.
- Serve with your favorite toppings! I recommend whipped cream, maple syrup, and strawberry sauce!
