These Air Fryer Sweet Potato Fries are incredibly crispy and easy to make. I know a lot of people claim their sweet potato fries are crispy, but these ones actually are! Tossing the fries in a quick cornsatrch slurry is what helps them crisp up without getting mushy or burnt.

I LOVE sweet potato fries! Whenever I'm eating at a restaurant, I always ask to replace my regular fries with sweet potato fries. They taste way better, in my opinion, and they're more nutritious, too.
I recently tried air-frying them, and the results were even better than I expected. They came out super crispy, light, and not mushy at all. At first, I cut them into thick pieces (about ½ inch), but then I realized that thinner pieces (around ¼ inch) got even crispier. The only downside was that the thinner pieces did not feel like sweet potato fries; they were too thin, like chips, and not enough fluffy potato inside.
So my preference is still to cut them ½-inch thick. You get crispiness on the outside and a decent amount of fluffy sweet potato on the inside.
Key Ingredients
Note: When I photographed this recipe, I made a big batch using five sweet potatoes. I regret this. I should have prepared less. Five potatoes ended up taking a really long time because I could only fit one potato's worth of fries in the air fryer basket each time, otherwise they would not crisp up.
Sweet Potatoes: I used the orange-colored sweet potatoes. I have used the white-colored ones in the past, and they work just as well.
Cornstarch: This forms a crispy coating on the outside and also prevents them from burning as much.
Olive oil: For coating the fries.
Water: A tiny amount of water is needed to hydrate the cornstarch.
Seasonings: Garlic powder, onion powder, and salt.
Instructions
STEP 1: Cut the sweet potatoes into ¼ or ½-inch thick sticks. The size is up to you. ¼ inch will be extra-crispy, while ½ inch will be less crispy, but you'll get more fluffy potato on the inside.
STEP 2: Add the sweet potatoes to a bowl of cold water and let them soak for 10 minutes. This will prevent them from burning as much. Drain and dry thoroughly with a kitchen cloth.
STEP 3: In a large bowl, combine olive oil, garlic powder, onion powder, salt, cornstarch, and 2 teaspoons of water. Mix to form a slurry. Add the sweet potatoes and toss to coat them evenly.
STEP 4: Preheat your air-fryer to 400°F. Add half the fries and arrange them with a bit of space between each fry.
STEP 5: Spray with oil and cook for 18-20 minutes, shaking the basket halfway through so the sweet potato fries cook evenly. Transfer to a wire rack and repeat with the remaining sweet potato. Enjoy!

- 1 tablespoon extra virgin olive oil
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon salt
- 1 ½ tablespoons cornstarch
Instructions
- Peel and cut the sweet potatoes into ½-inch thick fries (¼ for extra-crispy).
- Add the sweet potatoes to a large bowl of cold water and let them soak for 10 minutes. This will prevent them from burning as much. Drain and dry them thoroughly with a dish towel.
- In a large bowl, combine the olive oil, garlic powder, onion powder, salt, cornstarch, and 2 teaspoons of water. Mix to form a slurry.
- Add the sweet potatoes to a bowl and toss to thoroughly coat the fries.
- Preheat your air-fryer to 400°F. Add half the fries to the basket with a little space between each fry. Spray with oil and cook for 18-20 minutes, shaking the basket halfway through. Transfer the fries to a wire rack and repeat with the other half. Enjoy!
