Sweet Taro Pancakes Recipe

These Taro Pancakes are soft and fluffy and go perfectly with maple syrup and a dollop of whipped cream. They may not be purple in color, but they are packed with taro flavor!

  • In a medium bowl, combine flour, taro powder, baking powder, baking soda, salt, and sugar, and whisk until homogenous.
  • In a large bowl, beat the eggs, milk, and vanilla until light and foamy, about 3 minutes at high speed. Slowly drizzle in the melted butter while whisking.
  • Pour the dry mixture into the wet mixture and quickly mix until just combined. Be careful not to overmix. There should be plenty of lumps. This will give us taller and fluffier pancakes.
  • Preheat a skillet with butter or oil over medium heat. Use a paper towel to wipe the oil evenly across the pan. Drop a ¼ cup of batter and cook on one side for about 2 minutes or until bubbles form and break. Flip the pancake over and cook for another 2 minutes until the bottom is golden brown.
  • Serve with whipped cream, maple syrup, and steamed taro.

Notes

Taro bubble tea powder can be purchased from Asian grocery stores or on Amazon.
