Add all the ingredients to a blender and blend until smooth. The batter will be very runny.
Heat a skillet over medium heat until hot. Grease generously with butter or oil. Pour ⅓ cup of batter into the center and quickly swirl around to make a circle. Cook until the top starts to dry out, then flip and cook until the otherside is golden brown.
Serve with lingonberry sauce, sugar, or your favorite pancake toppings.
