Spicy Chinese Chili Sauce

This is the famous chili sauce you see in all those Chinese TikTok cooking videos. It's spicy, garlicky, and very aromatic. There was no recipe for it online, so I thought I would make one. This recipe is like a combination of all the techniques I saw.

  • In a medium saucepan, heat oil to 300℉ over medium heat. Add the infused oil ingredients. The temperature will go down immediately. Try to maintain a temperature around 250-275℉. Cook for about 7 minutes until everything has a light golden color.
  • Strain the oil and reheat it over medium-high heat until it reaches 350℉.
  • Add Fresno chile peppers, jalapenos, garlic, and ginger, and cook for 2 minutes until the chili peppers are softened. Remove from the heat and let it sit for 10 minutes to allow the flavors to infuse.
  • Transfer the chili sauce to a serving bowl. Add salt and vinegar, and stir to combine.

Notes

Storaage: Store leftovers in an air-tight container in the refrigerator for up to 5 days.
