In a large bowl, whisk together the flour, sugar, baking powder, and salt. Add the cold butter, then use your fingers to work it into the dry ingredients until they resemble coarse crumbs. Gently fold in any mix-ins, if using.
In a small bowl, combine the buttermilk, egg, and vanilla extract. Pour over the flour mixture. Stir gently with a spatula until all the flour is moistened. The dough should feel soft but not too sticky. If it's too sticky, add 1-2 tablespoons of flour. If it's too dry, add 1-2 tablespoons of buttermilk (just enough to make the dough come together).
