Roasted Butternut Squash

This simple Roasted Butternut Squash is one of my favorite fall side dishes. Ready in 35 minutes, it's an easy weeknight side dish or holiday side dish.

Ingredients
  

  • 1 medium butternut squash (peeled and seeds removed)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • pinch of nutmeg and cinnamon (optional)

Instructions
 

  • Preheat your oven to 400°F and line a baking sheet with parchment paper.
  • Cut the squash into 1-inch cubes, and add to a large bowl.
  • Add the rest of the ingredients and toss to coat evenly.
  • Spread the squash on the prepared baking sheet with some space between each one. Bake for 30-35 minutes until tender.
