Quinoa Salad

This healthy quinoa salad is packed with veggies, fresh herbs, chickpeas, and a tangy and sweet dressing. Perfect for meal prep, barbecues, potlucks, and cookouts.

Ingredients
  

  • 1 cup uncooked quinoa
  • 1 (15-ounce) chickpeas (drained and rinsed)
  • 1 cup cherry tomatoes (halved)
  • 1 medium cucumber (diced)
  • 1 medium red bell pepper (diced)
  • ¼ small red onion (finely chopped)
  • cup chopped parsley, cilantro, or mint leaves (or combination of 3)
  • ¼ cup crumbled feta (optional)

For the dressing

Instructions
 

  • Cook the quinoa according to package directions.
  • Combine all the dressing ingredients in a small bowl.
  • Add the remaining ingredients to a large bowl.
  • To the large bowl, add the cooked quinoa and drizzle the dressing on top. Toss to evenly coat. Enjoy!
