Mashed Sweet Potatoes

These mashed sweet potatoes are easy to make and naturally sweet. A drizzle of maple syrup takes them to the next level.

  • Peel and chop the sweet potatoes into 1-inch cubes. Transfer to a large pot. Add salt and enough cold water to cover the sweet potatoes by about 1 inch.
  • Bring to a boil, then reduce to a simmer, and cook for 15-20 minutes until soft and tender. Drain and transfer to a large bowl.
  • Mash the potatoes with a potato masher.
  • Add the butter and gently fold until melted.
  • Stir in ½ cup of milk, then add up to ¼ cup more to reach your desired consistency.
  • Stir in ¼ cup of maple syrup, taste, and add more as needed. Enjoy!
