This Siu Mai Wrappers recipe is easy to make with only three ingredients: flour, salt, and boiling water. You can optionally add food coloring to give them their signature color.
In a large bowl, combine boiling water, salt, yellow food coloring, and red food coloring. Stir until the salt dissolves. Add flour and knead it for 2-3 minutes until it forms a smooth dough. Cover with a damp towel and let it rest for 30 minutes, or refrigerate overnight.
After resting, divide the dough into four pieces. Roll each piece into a long rope and cut it into small pieces approximately the size of an acorn.
Dust a clean surface with flour and roll out each piece of dough into a small circle about 3.5 inches in diameter.
Use the fresh wrappers immediately, or if you intend to use them later, sprinkle extra flour between each wrapper, stack them, place the stack in an air-tight plastic bag, and freeze them. Defrost in the refrigerator before use.
