Homemade Siu Mai Wrappers

This Siu Mai Wrappers recipe is easy to make with only three ingredients: flour, salt, and boiling water. You can optionally add food coloring to give them their signature color.

  • In a large bowl, combine boiling water, salt, yellow food coloring, and red food coloring. Stir until the salt dissolves. Add flour and knead it for 2-3 minutes until it forms a smooth dough. Cover with a damp towel and let it rest for 30 minutes, or refrigerate overnight.
  • After resting, divide the dough into four pieces. Roll each piece into a long rope and cut it into small pieces approximately the size of an acorn.
  • Dust a clean surface with flour and roll out each piece of dough into a small circle about 3.5 inches in diameter.
  • Use the fresh wrappers immediately, or if you intend to use them later, sprinkle extra flour between each wrapper, stack them, place the stack in an air-tight plastic bag, and freeze them. Defrost in the refrigerator before use.
