Try this French Toast Casserole the next time you want to make French toast! It's much easier than making it the traditonal method and tastes better too!
In a large bowl, whisk together the eggs, milk, brown sugar, vanilla extract, cinnamon, and salt. Toss this with the bread cubes until evenly coated then transfer to a greased casserole dish.
In a small bowl, combine the brown sugar, flour, and cinnamon. Use a fork to work in the butter until you have a texture resembling coarse bread crumbs. Sprinkle this mixture over the casserole.
The casserole can be refrigerated overnight or baked immediately. If using the overnight method, cover the casserole with plastic wrap and refrigerate.
When you're ready to bake, preheat the oven to 375°F and bake for 45-50 minutes, until the filling is set and the top is golden brown. Feel free to top with powdered sugar and/or maple syrup. Enjoy!
