Easy Enoki Beef Rolls

These Enoki Beef Rolls have been appearing all over my social media feed so I thought I would give them a shot. They consist of tiny morsels of enoki mushrooms tightly wrapped in beef slices. For the beef slices, I am using pre-sliced hotpot meat but you can slice the meat yourself. Just make sure to slice them very thinly.

  • In a small bowl, combine the sauce ingredients and set aside.
  • Rinse the enoki mushrooms, slice off the roots, and separate them into small strands. When I photographed this, I made the bundles too big. Try to make them a bit smaller than the picture.
  • Wrap the enoki mushrooms with the beef slices and set aside.
  • Heat one tablespoon of oil in a skillet over medium-high heat. Fry the enoki mushrooms in batches until the bottom turns brown. Remove the enoki mushrooms to a plate. There should be some leftover oil in the pan.
  • Reduce the heat to medium and add the minced garlic to the empty pan. Cook for 15 seconds until fragrant. Return the enoki mushrooms and pour in the sauce mixture. Reduce heat to low, cover, and simmer for 3 minutes. Remove the lid and drizzle on sesame oil and green onions. Enjoy!

Notes

Beef: Pre-sliced hotpot meat works great for this. You can buy them from Asian grocery stores. If you prefer to slice it yourself, you can buy your own beef roast. Make sure to freeze the roast for 3-4 hours until it is semi-solid. This will make slicing much easier.
