    Sweet And Moist Cornbread

    This sweet cornbread recipe is soft, moist, and extremely easy to make at home. It does not require a stand mixer or even any kneading. All you do is combine the dry ingredients and wet ingredients, then bake. It's one of the easiest but most rewarding recipes out there.

    About This Recipe

    Whenever I have Texas barbeque, cornbread is what I look forward to the most. Yes, I think I even like it more than the barbeque itself! Something about the crumbly texture of cornbread and that sweet, nutty taste is absolutely irresistible.

    Personally, I like my cornbread on the sweeter side. I know there is a lot of debate on whether sweet or savory is better, but overall, it is a very easy variable to control. If you like it sweeter, then add more sugar; otherwise, just add less.

    During my trip to San Fransisco last month, my brother-in-law made a brisket and this is the recipe I made to go with it. My niece and nephew both really enjoyed it! Since babies and toddlers can be picky eaters, the fact that they liked it means it must be good, so don't skip this recipe!

    Key Ingredients

    Cornmeal: You can use either fine or coarse-grain cornmeal. I have used both with success.

    Buttermilk: Instead of buttermilk, you can also use milk and vinegar. To do that, simply add 1 tablespoon of vinegar to a measuring cup, then fill to the 1 cup line with milk.

    Flour: I used all-purpose flour.

    Baking powder + baking soda: We will use both of these to help leaven the bread. The baking soda will react with the acidity in the buttermilk to give extra rise.

    Melted butter: If you do not have butter, you can easily use vegetable or canola oil instead.

    Eggs: We need one egg to help bind everything together.

    Brown sugar + honey: We will use both brown sugar and honey to sweeten the bread and also add flavor.

    STEP 1: In a large bowl, whisk together the dry ingredients (cornmeal, flour, baking powder, and baking soda).

    STEP 2: In a medium bowl, whisk together the wet ingredients (buttermilk, melted butter, brown sugar, egg, and honey).

    STEP 3: Pour the wet ingredients into the dry ingredients and whisk until thoroughly combined.

    STEP 4: Transfer to a greased square or circle baking dish and bake for 20-22 minutes until a toothpick inserted into the center comes out clean.

    Sweet And Moist Cornbread

    This cornbread is sweet and SUPER moist. I think the sweetness is perfect, but if you prefer it less sweet, you can cut the sugar in half.

    Ingredients
      

    • 1 cup yellow cornmeal
    • 1 cup all-purpose flour
    • 1 teaspoon baking powder
    • ยฝ teaspoon baking soda
    • 1 cup buttermilk (see notes for substitute)
    • ยฝ cup melted butter
    • โ…“ cup packed brown sugar
    • 1 large egg
    • 2 tablespoons honey

    Instructions
     

    • Preheat your oven to 400ยฐF and grease a 9-inch baking pan.
    • In a large bowl, whisk together the cornmeal, flour, baking powder, and baking soda.
    • In a medium bowl, combine the buttermilk, butter, brown sugar, egg, and honey. Whisk until smooth, then pour into the dry ingredients and whisk until combined.
    • Pour the batter into the prepared baking pan and bake for 20-22 minutes until golden brown on top and a toothpick inserted into the center comes out clean (a few crumbs are OKAY but there should be no streaks of wet batter).
    • Slice the cornbread into pieces and enjoy!

    Notes

    Buttermilk: You can substitute it with vinegar and milk. Add 1 tablespoon of vinegar to a measuring cup and fill to the 1 cup line with milk.
