    Sourdough Garlic Knots

    Overnight Sourdough Garlic Knots are a delicious, soft, and fluffy bread that's super easy to make with your sourdough starter. Make the dough before bed, and you'll have delicious knots in the morning.

    About This Recipe

    Garlic and bread... I cannot think of a better pairing. Now throw some sourdough into the mix, and you might just have the best thing ever.

    These sourdough garlic knots are incredibly easy to make and have a delicious, tangy quality to them. Using an older starter that is at least two weeks old will give them an even tangier flavor, which I love. I actually prefer these over regular garlic knots because the extended fermentation gives them a slightly chewy exterior and an even softer and fluffier interior.

    I finished these with my homemade garlic butter sauce. And if you're familiar with my blog, you know my parents used to run their own pizza restaurant, and we made the best garlic fingers and garlic bread. This garlic butter is based on the same recipe. However, I did omit the minced garlic because I found they tend to burn in the oven after 20 minutes, but the garlic flavor is still really great. And to quote my wife's friend, they "tasted amazing"!

    Key Ingredients

    Sourdough starter: You'll need โ…“ cup of active sourdough starter. Depending on how wet your starter is, you may need to add slightly more flour so the dough is not too dry.

    Water: Like all pizza doughs, the base of the dough is made with water.

    Olive oil: A little bit of olive oil helps keep the inside soft and fluffy. If you don't have olive oil, you can use any other type of oil or melted butter.

    Sugar & salt: For lightly flavoring the dough so it doesn't taste plain.

    All-purpose flour: All-purpose flour is all you need to make a soft and fluffy garlic knot.

    For the garlic butter: You'll need unsalted butter, garlic powder, Italian seasoning, salt, and black pepper. I opt to use galric powder instead of fresh garlic because I find fresh garlic tends to burn before the knots are ready.

    Grated parmesan and parsley: These are optional but they add some freshness and saltiness.

    STEP 1: In a stand mixer bowl, whisk together the sourdough discard, water, olive oil, sugar, and salt.

    STEP 2: Mix in the flour and knead with the dough hook for 5-6 minutes until smooth and elastic.

    STEP 3: Cover with plastic wrap and allow to rise in a warm place for 6-8 hours, or until doubled in size.

    STEP 4: Punch down the dough, then turn the dough onto a lightly floured surface. Roll into a log, and divide into 16 equal pieces.

    STEP 5: Roll each piece into an 8-inch rope and tie into a loose knot. Place on the prepared baking sheets. Cover and let rise for another 45-60 minutes.

    STEP 7: Combine the garlic topping ingredients in a small bowl. Brush over the knots, reserving some of the topping to brush on after they come out of the oven. Bake at 400ยฐF for 20-23 minutes until golden brown. Brush with more garlic butter, and sprinkle with parsley and parmesan.

    • ยฝ teaspoon black pepper
    • ยฝ teaspoon salt

    Optional for after baking

    • chopped parsley

    Instructions

    • Line 2 large baking sheets with parchment paper.
    • Punch down the dough, then turn the dough onto a lightly floured surface. Roll into a log, and divide into 16 equal pieces.
    • Roll each piece into an 8-inch rope and tie into a loose knot. Place on the prepared baking sheets. Cover and let rise for another 45-60 minutes until noticeably puffed.
    • Combine the garlic topping ingredients in a small bowl. Brush over the knots, reserving some of the topping to brush on after they come out of the oven.
    • Bake at 400ยฐF for 20-23 minutes until golden brown. Brush with more garlic butter, and sprinkle with parsley and parmesan.
