    Homemade Breakfast Sausages

    These homemade Breakfast Sausages are made with ground pork and an assortment of pantry spices! Juicy, easy-to-make, and always delicious. The perfect way to start off your morning.

    About This Recipe

    I have so many fond memories of making breakfast with my dad on weekend mornings. We'd rotate between pancakes, French toast, and breakfast sandwiches. One of our favorite things to make was homemade breakfast sausages. My dad never let me buy ones made at the store because he thought they were filled with additives and unnecessary ingredients, so we always made our own.

    Homemade breakfast sausages are actually very easy to make. All you have to do is completely forget the "sausage" part of it. Instead of pumping the meat into casings, just shape the meat into patties and grill them in a skillet. It's way easier, and I actually think it tastes better because the meat gets nice and caramelized on the outside.

    Key Ingredients

    Ground pork: I sometimes make this with pork and beef mix if I can't find plain ground pork at the store.

    Brown sugar: For sweetness and adds a nice caramelization to the outside of the patties.

    Salt: To enhance the flavors. It also helps dissolve the pork proteins so they have a bouncier texture.

    Sage & thyme: That familiar breakfast sausage taste comes from sage and thyme. I usually just use the ground/dried kind, but if you're looking to go all out, fresh herbs will give it an even better taste.

    Red pepper flakes: To make the sausages a bit more exciting, I like adding a pinch of red pepper flakes, but if you don't like spicy food, you can leave it out.

    Other seasonings: Smoked paprika (can be substituted with regular paprika), black pepper, garlic powder, and onion powder.

    STEP 1: Add all the ingredients to a medium bowl and mix until well combined.

    STEP 3: Heat a skillet until hot over medium heat. Cook the patties for 3-4 minutes on each side until lightly browned and cooked through.

    Ingredients
      

    • 1 pound ground pork
    • 1 tablespoon brown sugar
    • 1 teaspoon salt
    • 1 teaspoon ground sage
    • ยฝ teaspoon thyme
    • ยฝ teaspoon black pepper
    • ยฝ teaspoon smoked paprika (optional)
    • ยฝ teaspoon crushed red pepper flakes (optional)
    • ยผ teaspoon garlic powder
    • ยผ teaspoon onion powder

    Instructions
     

    • Add all the ingredients to a medium bowl and mix until well combined.
    • Shape the mixture into 6 small patties.
    • Heat a skillet until hot over medium heat. Cook the patties for 3-4 minutes on each side until lightly browned and cooked through. Serve immediately. Enjoy!
