    About This Recipe

This recipe is one you're going to want to keep in your back pocket. In fact, I keep a bag of potatoes in my fridge at all times just so I can make this whenever I need an easy side dish. These crispy air fryer potatoes pair well with basically any meal, and they come together with just a few pantry staples.

These potatoes are exactly what air fryers excel at- cooking things quickly while giving them a crispy exterior. Simply toss potatoes with some oil and seasonings, then pop them in the air fryer for 18-20 minutes. Easy peasy.

    Key Ingredients

    ingredients prepped in bowls.

Potatoes: I'm using yellow baby potatoes because they're easy to prep and are a great all-purpose potato. Red potatoes would also work well because they're low in starch content and will hold up well in the air-fryer, and get nice and crispy. I left the skins on because they're edible and have most of the fiber, but you can peel them if you prefer

Oil: I use olive oil, but any neutral-flavored oil, like avocado, canola, or vegetable oil, will work.

Seasonings: I use a combination of Italian seasoning, garlic powder, onion powder, paprika, salt, and black pepper. Feel free to use whatever seasoning mix you like.

    Instructions

    baby potatoes halved in bowl.

STEP 1: Halve the baby potatoes. If you are using regular potatoes, make sure to cut each potato into uniform pieces so that they cook evenly.

halved potatoes tossed with oil and seasonings in white bowl.

STEP 2: In a large bowl, toss the baby potatoes with the olive oil and spices.

seasoned potatoes spread in air fryer basket.

STEP 3: Spread the potatoes in the air fryer basket in a single layer, ideally with a bit of space between each piece. If your air fryer is small, you may have to do this in two batches.

potatoes after air frying; golden and crispy on outside.

STEP 4: Air-fry for 18-22 minutes, shaking halfway through, until golden and crispy on the outside. Sprinkle with freshly chopped parsley (optional).
