    Best Homemade Hamburger Buns

    I've spent many years perfecting my homemade hamburger buns recipe, and I'm now I'm finally sharing it on my blog. Made with only 8 simple ingredients, they're insanely soft and fluffy, and WAY better than store-bought. These will become your go-to when making hamburgers at home!

    About This Recipe

    These are the best hamburger buns from scratch! They come out incredibly soft and fluffy, with just the perfect amount of sweetness. I made these for a smash burger night with some friends recently, and everyone was so impressed! Several people asked me for the recipe, and one person even said they were the best burger buns he ever had.

    I know baking homemade buns may sound intimidating, but it is actually a very easy process. The first time I made hamburger buns was during the pandemic (those days when everyone was trying their hand at baking), and I will admit they didn't turn out great. They were mostly very dry and crumbly. But later on, I found out how to make them perfectly, and I have to say, the recipe is the most important aspect. This recipe is FOOLPROOF. The buns always come out soft, tender, and fluffy. It's because they have eggs and oil in them, which gives them a very soft crumb.

    I've written the process so it is very easy to understand, and taken lots of pictures. Just follow the recipe, and I know it will work for you.

    Key Ingredients

    Flour: All-purpose flour is all you need for soft and fluffy hamburger buns. When you measure the flour, make sure you use the "spoon and level" method. That is, gently spoon flour into your measuring cup and level it off with a knife, instead of scooping directly from the flour bin. This guarantees an accurate measurement.

    Instant yeast: This is what gives the buns their soft and pillowy texture. I like using "instant yeast" because you can mix it directly into your dough without needing to activate it first. If you are using activated yeast, you'll need to let it sit in the warm water with sugar for 10 minutes before adding the rest of the ingredients.

    Warm water: By starting the recipe with warm water, we can speed up the activity of the yeast. Make sure the water is not TOO HOT, around 110ยฐF is perfect, otherwise it will kill the yeast.

    Eggs: Add richness and tenderness to the crumb. We'll also need an egg for brushing on the outside of the buns to give them a shiny exterior.

    Vegetable oil: This is what makes the buns incredibly soft. You can also use melted butter in a pinch.

    Sugar: A touch of sweetness makes these buns so addictive. You can cut this amount by up to half if you're avoiding sugar.

    Salt: To enhance all the flavors.

    Raw sesame seeds (optional): For sprinkling on the tops of the buns.

    STEP 1: In a stand mixer bowl, combine the water, oil, sugar, 1 egg, yeast, and salt. Add the 3 ยผ cups of flour and knead with the dough hook for 5 minutes until it no longer sticks to the sides of the bowl. If the dough is still sticky, add up to ยผ cup more of flour.

    STEP 2: Cover and let rest for 1-2 hours, or until doubled in size.

    STEP 3: Punch down the dough and divide it into 8 pieces. Roll into balls and place on a large parchment-lined baking sheet 3 inches apart. Gently press on each ball to flatten into a disc shape.

    STEP 4: Cover and let rest for another 60-90 minutes until noticeably puffed.

    STEP 5: In a small bowl, whisk the remaining egg with 1 tablespoon of water. Brush over the buns and top with sesame seeds, if using.

    STEP 6: Bake at 375ยฐF for 15-17 minutes until golden brown on top.

    Ingredients
      

    • 1 cup warm water (not hot, about 110ยฐF)
    • 2 large eggs (divided)
    • ยผ cup vegetable oil
    • ยผ cup granulated sugar
    • 1 ยฝ tablespoons instant yeast
    • 1 teaspoon salt
    • 3 ยผ-3 ยฝ cups all-purpose flour
    • 1 tablespoon sesame seeds (optional)

    Instructions
     

    • In a stand mixer bowl, combine the water, oil, sugar, 1 egg, yeast, and salt.
    • Add the 3 ยผ cups of flour and knead with the dough hook for 5 minutes until it no longer sticks to the sides of the bowl. If the dough is still sticky, add up to ยผ cup more of flour. Cover and let rest for 1-2 hours, or until doubled in size.
